secret ingredient challenge

At the office, two of my coworkers and I have been doing a ‘Secret Ingredient Challenge.’ It’s really fun.. we each bring in an ingredient on Wednesdays and on Friday bring in something edible containing all three ingredients. My ingredient was tofu. H brought in greek yogurt and S brought pistachios.

I found this recipe for curried tofu avocado dip and got to work. I added pistachios to the mix in the blender and also sprinkled some chopped pistachios on top as well. 

I think it came out pretty well! I served it with cucumbers, cherry tomatoes, carrots, and bell pepper slices.

Lunch today was a quick soup I made last night after class for today’s lunch. It’s chicken broth, rice noodles, lots of garlic, peanut butter, green onion,  ginger and basil. Easy and delish!

I got this six-pack of Rolling Rock from one of my attorney’s as a ‘thank you’ for running around town this week to drop off forgotten documents one day and a wallet another day. You’re welcome!

I haven’t cooked a meal since Sunday! Totally depressing. I really find cooking relaxing and also very satisfying to make create deliciousness. This week was just hectic for me with both work and school. I’m looking forward the weekend and making some great food! Today I didn’t even get a chance to eat my english muffin! I’m a paralegal and work comes in waves. Sometimes I’m very busy and other times it’s my job to be ready when it gets busy. This morning was a very hectic, last-minute scramble to get something filed. Once everything settled down I pulled out a snack bar to hold me over to lunch.

It hit the spot! I usually like the chocolate ones but these, the Honey Almond Flax Chewy Granola bars are the perfect mix of sweet and salty. They also have 7g of protein and 4g of fiber.

I mix my own trail mix and bring a big bag to work as a snack. Usually it contains whatever yummy bulk items Sunflower Market has on sale. This batch has almonds, dried apricots and cranberries, peanuts and pecan pieces. Sometimes there’s granola in the mix, sometimes chocolate too. There are NEVER cashews or cinnamon candied almonds because I have not self-control and could eat a whole pound of each in one day. Maybe not that bad. But pretty close.
