veggie soup

I was craving soup (crazy, I know, it was like 96 degrees here yesterday!) and had a ton of veggies on hand so this just kinda came together. I cooked some onion and garlic in a little butter.

Added some chopped carrots and yellow bell pepper.

Poured in chicken broth and broccoli,

let simmer for a while before throwing in a few handfuls of spinach.

I blended batches of the soup and added a couple of tablespoons of flax seeds.

I returned the blended soup to heat and added a tablespoon of heavy cream.

Then came the fun part, I put the soup in ramekins and covered with a slice of provolone cheese.

After a couple of minutes under the broiler, this was the result:

The soup was so good, we each had a second serving (skipped the cheese). For dessert we each had half of this adorable mini watermelon.


White Bean, Chorizo & Kale Soup

This soup is one of my all-time favorites. It is soooo easy and quick but packs huge flavor from very few ingredients. I get rave reviews each time I make it.

Saute onion and garlic in olive oil, add chorizo and stir for a minute or so to brown. Throw in a can of rinsed white beans and stir around a little more to coat beans with chorizo flavor. Add chicken broth and bring to boil and then let simmer until the chorizo is cooked. Add the kale and turn off heat. This is seriously good! I’ve also made this soup before with red potatoes instead of the beans and it is also really good.

This semester the boyfriend has class on Monday nights and I do not. I use this time to do the grocery shopping, laundry and other chores. I also usually like to make something really good for dinner and leftovers for lunches throughout the week. I got a ton done last night! I set Pandora to my Francoise Hardy station, and went to work! I’ll admit I took a few breaks.. I made and enjoyed several slices of caprese bruschetta and pinot grigio on my balcony with beautiful french music in the background. It was wonderful and relaxing and the evening was so productive.

For dinner I made Tortilla Soup. It was different than the way I usually make it but it was good different. Authentic tortilla soup has a very simple, delicious broth and it’s they type I usually make. Last night, however, I wanted to use up some leftover pinto beans and white corn and thought this would be the perfect way. It came out very spicy which we like and gets toned down with the sour cream and avocado.

quick chicken rice soup

I’ve had a bag of  Trader Joe’s Chicken Fried Rice in my freezer for quite some time and finally came up with what I wanted to do with it. I chopped up some carrots and kale and threw them in some veggie broth, added some of the rice and voila! Super quick chicken rice soup. It was very good for how fast it was.

coconut shrimp soup

We’re back from our backpacking trip and I’m trying to organize my pictures before I post about the trip. It was AMAZING! After I took a shower the second we got home I was ready to go back.

Tonight we made this coconut shrimp soup: http://www.marthastewart.com/recipe/coconut-shrimp-soup. We decreased the amount of carrots and added mushrooms and spinach. We also added Marie Sharp’s Beware Habanero Pepper Sauce for some heat. We like this hot sauce A LOT because it’s nice and hot without the vinegar. Soup came out great!

friday lunch

Lunch today was a quick soup I made last night after class for today’s lunch. It’s chicken broth, rice noodles, lots of garlic, peanut butter, green onion,  ginger and basil. Easy and delish!

I got this six-pack of Rolling Rock from one of my attorney’s as a ‘thank you’ for running around town this week to drop off forgotten documents one day and a wallet another day. You’re welcome! 

cookies v. broccoli

Today I was craaaaving some homemade, chunky chocolate cookies so when I went to the store I stocked up on the necessities to make some. Chocolate chunks, walnuts.. mmm. My mouth was watering the ride home and I opened the bag to ‘test’ a few chunks of semi-sweet goodness just to make sure they were ‘ok.’ Somewhere between dipping a few chunks in peanut butter and the laundry I changed my mind. It might be because after a couple of months of being stuffed away in a drawer my bikini made its debut yesterday and I’m thinking it showed too many of the cookies I’ve eaten since the last time I wore it. So, instead of cookies, I made broccoli soup. And it was really satisfying! Instead of eating a bunch of cookie dough, more chocolate chunks, cookies and who knows how many glasses of milk I filled up on creamy (a half cup of half n half and a few shreds of cheese snuck their way in there) broccoli goodness guilt-free!
