I’m back!

5 Jul

What a month it’s been for me! I dropped off the face of the blogosphere around mid-May (finals) and haven’t had a chance to even log in since then. I took four classes in summer school (so I can graduate in December!), took 8 exams in 4 weeks, trained not one but two new girls at work, went on vacation, moved to a new apartment, and almost had a meltdown because with all that going on I hardly got a chance to cook, let alone eat a normal meal at a normal time.

This is what led me to add a new page to this blog called, “Menus, Shopping Lists & Recipes.” I’d go shopping, get a few things that looked good and were on sale and then I get back home and realize I couldn’t really do much with what I got. Then having no time, it was easier to get a not-so-healthy alternative on the go. Perhaps having it all figured it out will make it easier on me when things get real hectic again and maybe it will help someone else out there, too!

It feels good to be back and on the right track to health again! I’m so excited!

secret ingredient challenge

1 May

At the office, two of my coworkers and I have been doing a ‘Secret Ingredient Challenge.’ It’s really fun.. we each bring in an ingredient on Wednesdays and on Friday bring in something edible containing all three ingredients. My ingredient was tofu. H brought in greek yogurt and S brought pistachios.

I found this recipe for curried tofu avocado dip and got to work. I added pistachios to the mix in the blender and also sprinkled some chopped pistachios on top as well.

I think it came out pretty well! I served it with cucumbers, cherry tomatoes, carrots, and bell pepper slices.

Check out my mango tree:

Looking so healthy!

In addition to the mango, I’m growing cherry tomatoes and jalapenos in my Aerogarden (the salsa kit!).

I’ve also got some other peppers growing in a pot outside.

If you don’t have an aerogarden yet, I highly recommend it. Not only do herbs grow wonderfully in it, put any plants near it and they thrive also. It’s great!

I’m having difficulty getting my head back to work and school.. I had way too much fun yesterday doing this:

Believe it or not, my arms and shoulders are killing me! This only means one thing.. I must do more!

All our activity got us starved so we stuffed our faces with veggies and yummy hummus!
